I spent this morning harvesting basil from our plants that are growing growing growing! I will give away the basil in the store, but I will have plenty to make a few batches of garlic basil pesto! I love this for a quick toss with pasta and veggies in the summer. I have all the ingredients at home waiting for the fresh basil! I use this recipe I modified from http://www.allrecipe.com/!
Ingredients
3 cups chopped fresh basil
1 cup extra virgin olive oil
1/2 cup pine nuts
2/3 cup grated Parmesan cheese
2 tablespoons minced garlic
1/2 teaspoon chili powder
Directions:
Put basil and oil into the food procesor and blend to a paste. Add other ingredients gradually and blend until it is smooth. I put some aside in the refridgerator and then I fill an ice tray with the rest and freeze cubes for use later!
